I have been craving this cake for a while. I have never actually made it. It is an easy cake to make but you need a little time to get all the parts done.
Make a basic chocolate cake. You can use a brownie mix if you would like.
Melt 2 sticks of butter = 1 cup.
To the melted butter add 2 cups sugar
After you have whisk those together add 1/2 c unsweetened cocoa.
Mix that well and get all the lumps out. Then add 4 eggs.
Add 1 teaspoon vanilla.
I got the mixer out to mix in 1 1/2 c all purpose flour. I also added 1/8 t salt.
Then add 1 1/2 c rough chopped pecans to the chocolate batter.
Nice and mixed well. Preheat the oven to 350. The directions say to grease and flour a 15x10 jelly roll pan. I don't have one so I sprayed a 13x9 baking dish.
All evenly spread in the pan. The jelly roll pan was to cook for 20-25 minutes. I checked it at 20 minutes and added about 10 more minutes. I added them in 2 and 3 minute intervals. You don't want to over cook it.
While the cake is baking I started on the icing. Melt 1/4 c butter.
Add 1/2 c milk to the butter. I made a mistake. DON'T MELT THE BUTTER. It just needs to be softened. It was not a complete disaster. It's chocolate so you don't throw it out.
Add 1/3 c unsweetened cocoa.
Then add 1 16 oz pkg of powdered sugar. 16 oz is equal to 2 cups. Mix well.
The icing all mixed up. It is not a thick icing.
Take the cake out of the oven and spread one pkg of small marshmallows on the top of the hot cake. Put back in the oven for about 5 minutes.
The melted marshmallows.
The chocolate icing poured over the marshmallows while still hot. Let the cake cool before cutting.
Mississippi Mud Cake Recipe
1 c butter melted
2 c sugar
1/3 c unsweetened cocoa
4 large eggs
1 teaspoon vanilla
1/8 teaspoon salt
1 1/2 c all purpose flour
1 1/2 c pecans rough chopped
Mix well and pour into a jelly roll pan. Bake in a 350 oven for 20-25 minutes
1 pkg miniature marshmallows
Add the marshmallows to the warm cake and put back in the oven for 5 minutes.
Chocolate frosting
1 16 oz pkg powdered sugar 2 cups
1/2 c milk
1/4 c butter softened
1/3 c unsweetened cocoa
Pour over the hot cake.
