Cabbage and Noodles

This is a great 2 pot meal.  I know  you usually hear of one pot meals but you have to use one to boil the noodles.  This recipe has a little bit of everything in it, but it is really easy to throw together even if it does use two pots.
Everything right there on one plate.
That's frozen peas in the bowl.
Add about a Tablespoon of olive oil to a pan.  I used a pot instead of trying to get everything in a skillet.
Slice your smoked sausage. Add to the pot to lightly brown.
While the sausage is browning chop an onion.
Add 1/4 cup of butter to the pot.
Add the onions
Add another Tablespoon of olive oil.  Let this cook until the onions get soft.
Chop about a half a head of cabbage and add to the pot.  Cook until tender.
Add 2/3 cup thawed frozen peas.  Cook until warm.
Add the 8 oz cooked egg noodles.
Stir until hot.  Add some salt and pepper.
And enjoy.  This is a keeper.

12 oz smoked sausage sliced
2 Tablespoons olive oil divided
1/4 cup butter
1 onion chopped
1/2 head cabbage chopped
2/3 cup frozen peas
8 oz uncooked egg noodles cooked
salt and pepper

BBQ Bacon Stuffed Chicken Breast

Okay folks what is better than chicken wrapped in bacon?  How about chicken stuffed with bacon and then wrapped in bacon.  It doesn't get much easier or better than that. When I saw this recipe in one of the many food blog emails that I subscribe to I knew I had to try it.  Well the next night the husband wanted chicken for dinner, I had bacon in the freezer so guess what we had for dinner.  You have to try this soon. 

The bacon gets nice and caramelized on the edges.
 You can use any BBQ sauce that you have or like.  I would suggest it be a thicker style sauce so it stays on the chicken.
 Thinly slice a onion or part of an onion.  How much you need depends on how many chicken breast you are cooking.
 Chop up a couple of slices of bacon.
 Saute the onions
 Cut a pocket in the chicken breast.
 Add the bacon to the onion and cook.  You don't want the bacon crispy yet.
 It is just about done.
 Add about 1/4 cup bbq sauce to the onions and bacon.
 Add the mixture to the pocket in the chicken.
 Close it over carefully so the mixture doesn't come out. Add some bbq sauce to the top of the chicken.
 Now carefully wrap the chicken in a couple of pieces of bacon.
 While you are preheating the oven to 400 put your skillet in the oven to heat it up. The put the chicken in the pan and you should hear a sizzle.
 Put the pan on the stovetop.  Heat on medium high heat.  Cook the chicken on both sides for about 3 minutes each.
 They have been turned.  You notice a little browning of the bacon. Place in the oven and bake for about 20 minutes.  Now after the 20 minutes test with a meat thermometer.  It should be 165.  Mine was not so I baked for 10 more minutes.
 The bbq sauce caramelized the bacon just perfect.
 Serve with a favorite vegetable or rice whatever you like.

chicken breast
2 pieces of bacon to wrap each breast
additional bacon to cook
sliced onion
1/4 cup bbq sauce for the onion bacon mixture
bbq sauce to spread on the chicken

Preheat oven to 400 Bake 20-30 minutes

Paula Deen Pumpkin Butter Cake

Fall means apples and pumpkins and hopefully cooler temperatures and colored leaves.  Well we have apples and pumpkins this year to look forward too.  This pumpkin butter cake is just like having a piece of pumpkin pie, especially if you put whipped cream on top.  It is very easy to make and you might think about having it at Thanksgiving if you need more than just a single pie. 
Sorry for the picture being so dark.  Flash and everything but it is just too dark. 
It has all the good things that a pumpkin pie has.
Start with one stick of butter.
Melt it and let it cool a little bit.
Add in one box yellow cake mix.
1 egg.  Stir well.
Press in the bottom of a 9x13 baking dish.
Yes I used the same bowl.  No need to mess up more.  Add 8 oz softened cream cheese.
1 15 oz can of pumpkin, mix well.
Add three eggs, mix well
Melt one stick of butter
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon cloves.  All these spices smell so good
3 3/4 cups confectioners' sugar.  Add a little at a time or you will have powdered sugar all over your kitchen.
Mix well.
Pour on top of the crust.  Place in a preheated 350 oven.  Bake for 40-50 minutes.  You do not want to over bake.  The middle will still be a little jiggly.
Serve with some whipped cream if you like.

1 box yellow cake mix
1 egg
1 stick melted butter

8 oz softened cream cheese
15 oz can pumpkin
3 eggs
1 stick melted butter
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon allspice
1/8 teaspoon cloves
3 3/4 cups confectioners' sugar
Bake in preheated 350 oven for 40-50 minutes.
