Vidalia Onion Potato Chip Nachos

This recipe is a different take on traditional nachos.  This is a great recipe to add to your next tailgate/homegate party. 
These are really good and something different. 
The ridged chips are the best to use but you can use regular ones as well.
Finely chop some onion.  Don't worry I didn't use all those onions, but while I was chopping I might as well chop the whole thing.
Lay out some chips on a cookie sheet.
Sprinkle some cheese on top.  I used two types of cheese.  This is monterey jack cheese.
I then added some cheddar cheese.  Sprinkle with some of the onions.
Then sprinkle the top with poppy seeds.  Place in a preheated 350 oven.  Heat for 5-10 minutes.  Watch them close.  You don't want the chips to burn.
Remove them from the oven.
Plate and enjoy.

Potato chips
grated cheese, you can use a mixture of cheeses
poppy seeds
chopped onions
and you can add some thyme if you like

Preheat oven to 350.  Heat for 5-10 minutes.

Orange Dijon Grilled Chicken

It's still warm enough to fire up the ole grill.  It's nice on hot summer or in this case fall days to fire up the grill and not heat up the kitchen.  This is a great chicken marinade.

You might have all of these things in your pantry.
Start with 1/4 cup olive oil
1/4 cup apple cider vinegar
1/2 cup brown sugar
3 Tablespoons dijon mustard
3 cloves garlic
1 teaspoon salt
Juice of one orange
Stir well.
Place the chicken and marinade in a zip lock back.  Let it marinade several hours.
Then place on the grill.
And you can't go wrong with corn on the cob.

Cherry Cobbler Cookies

This was a great year for fresh cherries.  In addition to having great cherries there were great recipes available for using the cherries.  Here is another new cherry recipe.  If you missed out on the cherries this year save the recipe for next year.  I have put a batch in the freezer so I can enjoy them for months to come. 

I had to bake a couple to try them.  I had to make sure they were edible, right?  They were.

This recipe uses cherry yogurt so the texture is a little different.
Take 1 stick of butter
Melt it in the microwave, then let it cool for a few minutes.  This is a great time to pit your cherries.
Measure out 8 oz of tart cherry greek yogurt.  Most containers are 5 oz so it might take almost 2.
Add the yogurt to the melted butter.
Add 1 cup sugar
1 teaspoon baking soda
1/2 teaspoon sea salt
2 1/2 cups all purpose flour
Mix well.  Also add 1 Tablespoon vanilla and 1 teaspoon almond extract.
Pit and chop 1 1/2 cups cherries
This cherry pitter is the best kitchen gadget I have.  It pits them so easily.
Add the cherries to the batter.
Scoop out and add to a preheated 350 oven.  Bake for 18-20 minutes.
I scooped this up and put in the freezer for later.  Make sure to label the bags.
Now enjoy these delicious cookies.

Cherry Cobbler Cookies Recipe

2 1/2 cups all purpose flour
1 cup sugar
8 oz tart cherry greek yogurt
1 1/2 cups cherries
1 stick butter, melted
1 T vanilla
1 teaspoon almond
1 teaspoon baking soda
1/2 teaspoon sea salt
Bake in a preheated 350 oven for 18-20 minutes.

Chewy Peanut Butter Oatmeal Cookies

These are some of the best cookies I have made in a while.  These are a great summer cookie because there is nothing in them that will melt in the hot sun.  These also freeze well. 

That is a beautiful plate of cookies. 
This recipe has both regular and quick oats in it.
Start with 1 stick of softened butter and 1/2 cup of butter flavored crisco.
Cream those together well.
Add 1 cup brown sugar
3/4 cup sugar
1 cup peanut butter.  You can use either smooth or crunchy.
2 eggs
1 teaspoon vanilla
2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups all-purpose flour
1 cup quick oats
1/2 cup old fashioned oats
Mix the dough well.  It will be thick.
Scoop out the dough onto a parchment lined cookie sheet.  Place in a preheated 350 oven and bake 9-10 minutes.  Do not overtake.  You can scoop the dough and place in the freezer to bake later.
Let the cookies cool on the baking sheet for about 5 minutes.
