Company Chicken Pot Pie

Here is another recipe that I somehow lost along the way.  What says winter better than a chicken pot pie?  These were good and they were huge so we also had leftovers.  The leftovers were good too.  Using a ready made pie crust had this dish even easier.


It sure looks pretty. 
It looks like a lot of ingredients but it's not too bad.
Start with some new potatoes.  Cut them into small chunks.  This will help them cook faster. Cook them for about 10 minutes in a covered pot.  this will partially cook them.
Chop an onion.
Dice a carrot into small pieces.
In a large pot cook the carrots, onions and celery if you have it.
When the potatoes are cooked drain and run cold water over them.
Remove the carrots and vegetables into another bowl.
Measure out 4 Tablespoons butter and 1/2 cup all purpose flour.
I reused the pot and melted the butter.
Add the flour
Stir until smooth.
Add 1 1/2 cups milk
1 1/2 cups chicken broth
1/2 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
Simmer until the sauce starts to thicken.
Add potatoes
Then add the other veggies.
Add the shredded cooked chicken.
1 cup frozen peas.  If you don't like peas then use green beans.
I like corn so I added corn as well.
Stir well.
I could have made one bi pot pie but I made two smaller pot pies.  I had these cute little pans that I wanted to use.
And they are the prettiest color too.
Fill the pans with the veggie mixture.
I had this much left over after filling the two pans.  So I will freeze this for another day.
The pie crust dough has been getting to room temp.  Roll out.
Then place on top of the pan.  Trim the edges.  Seal them down.
Cut slits in the top.
I sprayed the top with some butter.
I placed them on a cookie sheet to make it easier to move in and out of the oven.  Place in a preheated 400 oven.  Bake for about 45 minutes.
It's nice and golden brown.
Doesn't that look pretty?
Then dig in.

The excess pie crust you can do like I use to do when I was little.  I used small cookie cutters and cut out shapes and brushed them with butter and then sprinkling with cinnamon and sugar for a little treat.  I used to make these as a little girl with left over pie crust.


Company Chicken Pot Pie Recipe

1 pound new potatoes cut into 1/2 inch chunks
2 Tablespoons oil  I use olive oil
1 medium onion chopped
2 stalks celery chopped
2 large carrots cut into small chunks
4 Tablespoons butter
1/2 cup all purpose flour
1 1/2 cup milk
1 1/2 cups chicken broth
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cooked chicken
1 cup frozen peas and 1 cup frozen corn if you like
ready made pie crust

Preheat oven to 400.  Bake for 45 minutes.

Chocolate Covered Strawberry Brownies

This is another recipe that got lost in the shuffle.  I made this back when strawberries were still in season.  I thought what could be better than chocolate covered strawberries so this was the perfect recipe to try.
They didn't cut very well.
These start with homemade brownies.  You might could use a box mix and then add the strawberries and chocolate on top.
Start with a saucepan add 1 stick butter and 1 1/2 oz unsweetened chocolate. Cook until the butter and chocolate melts.
Then whisk in 1/2 cup cocoa powder and 1 1/4 cups sugar.
1/4 teaspoon sea salt
The butter is melted time to start whisking.
Add the cocoa and sea salt

The batter is thick.
Add in 3/4 cup all purpose flour
1 teaspoon vanilla
1 egg
Then spread into an 8x8 glass baking dish.  Bake in a preheated 350 oven for 25-30 minutes.
When it comes out let cool well.
While they are cooling slice some strawberries.
Now to add the strawberries.
Cover the top with the berries.
You need 8 oz semi sweet chocolate chips
Melt them in the microwave.
Then spread on top.  Let them cool and harden.
Then cut.

Chocolate Covered Strawberry Brownies Recipe

1 stick butter
1 1/2 oz unsweetened chocolate
1/2 cup cocoa powder
1 1/4 cup sugar
1/4 teaspoon sea salt
1 teaspoon vanilla
1 egg
3/4 cup all purpose flour
1 cups strawberries
8 oz semi sweet chocolate chips

Melt butter and unsweetened chocolate.  Mix in cocoa, sugar, salt.  Then add vanilla, egg, and flour.  Bake in a preheated 350 oven for 25-30 minutes.  Then cool.  Add strawberries and melt 8 oz semi sweet chocolate chips.
