Sweet Tea with Lemon Sugar Scrub

This is another scrub that I made for the holidays.  The recipe was for tea sugar scrub but I changed the name a little and added some lemon essential oil.  I think you will like this scrub.

This recipe made two of these little jars and also had a container left over.
I thought of the lemon oil after I started.
2 cups sugar
5 regular tea bags.  Cut the bags and empty the leaves.
1/4 cup coconut oil
Mix well.  Add about 15-20 lemon essential oil drops.
Then put in your jars.

Slow Cooker Steel Cut Oatmeal

This was another of my cold weather recipes.  There's nothing better than waking up to something warm in your tummy when the temperatures are single digits.  You can make this recipe in your crock pot while you sleep.  I will confess I have made steel cut oats before and they had an odd flavor to them.  I have waited a while before I tried them again.  They are different from regular oats.  I will show you in a minute.  But these oats tasted more like regular.  I have the leftovers in the fridge for the rest of the week.  I will be making these again.
You put various add ons in the bowl before you eat.  We'll talk more in a minute.
Part of this is what goes in the crock pot and part is what goes on top.
Start with 1 1/2 cups steel cut oats.  See they look very different.  I don't know why there is a different process for oats.  I will do some research on it and get back to you.
5 cups water.  I did put a liner in the crock pot.  This is a very messy recipe.  You will thank me for telling you to line it.
1 cup heavy cream.  I think this is what made the difference.  Made them more creamy.
1/2 cup brown sugar
3/4 cup apple pie spice.  If you don't have that add some cinnamon and nutmeg stuff like that.
1/2 teaspoon salt
Chop up about a 1/2 cup dried apples.  Mix it all together.  Cover and cook on low for about 4-6 hours.  That is what the recipe said but mine cooked longer and was fine.
Here is my nice warm breakfast.
Scoop up some.
I added walnut.  The recipe said almonds and I  have some for another day I just wanted walnuts this morning.
Sprinkle with dried cranberries.  Cherries would be good too.
Now drizzle with honey.
The honey is really good on top.
I took it back to bed and ate in my nice warm cocoon.  I have some leftovers for tomorrow too.

Quick and Easy Broccoli Cheddar Soup

For the last week they have been telling us we would have a snow day yesterday.  Well actually I think they call it a First Alert Weather day now. We got a little snow but the cold temperatures are the real story here.  What do you need on a snow day but a nice bowl of hot soup.  I have been wanting to try this broccoli cheese soup for a while.  I bought the ingredients on Sunday so I was ready.
I might have to add a grilled cheese sandwich with my bowl tomorrow.
I didn't use all that broccoli but couldn't remember how much I needed when I bought it.
Start with 3 Tablespoons butter.  But in a large pot to melt.
Chop a medium onion and add to the butter.  Cook until softened.
While the onions are cooking, measure out 3 Tablespoons flour
 1 cup half and half
2 1/2 cups low sodium chicken broth.
The onions are cooked so add the flour.
Stir it around and let get golden brown.
 Alternate adding half and half
And broth until it is all added.
Stir well to make sure there are no flour lumps.
 Add 1/2 teaspoon onion powder
 1/2 teaspoon garlic powder
Slice about 2 carrots into thin rounds.  I might grate mine next time.
Then chop about 3 cups broccoli.  You don't want it in large pieces.  I thought I had mine small enough but when I ate it there were a few that were larger than I thought.
Cook it for about 20 minutes.
 Doesn't this look good?
Grate 2 cups sharp cheddar cheese.
Add to the soup.  Let cook until melted. I also added some salt and pepper.
Spoon up and enjoy.  Nothing better on a cold day.
