Julia Child's Glazed Carrots

I like cooked carrots but wanted something different from just boiling them in water.  I don't like carrots cooked with brown sugar or maple syrup because they are too sweet.  This is a great recipe that brings out the natural sweetness of the carrots and is easy to boot.
Carrots, some beef broth, butter and a little sugar and some time are all that this recipe takes.
Add 6 Tablespoons of butter to a heavy saucepot.
To the butter add 2 cups beef broth.
Then add 2 1/2 Tablespoons of sugar.  Heat on low to melt butter.
Peel and cut 2 pounds of carrots.  They suggested cutting them into matchstick strips.  I think next time I will use the madoline and cut them into rings.
Add to the pot with some salt and pepper.
Bring to a boil and stir occasionally.  I turned them down and let them simmer boil for about 30-40 minutes.
The sauce will cook down and the carrots will be tender.  Sprinkle with parsley and serve.
They were great with the baked ham.

Glazed Carrots Recipe

2 pounds carrots
2 cups beef broth
6 Tablespoons butter
2 1/2 Tablespoons sugar
salt, pepper and parsley
