Poppy Seed Chicken

Although this is a very easy recipe to make it's one that I tend to forget about and don't make very often.
This recipe doesn't take much and most of the ingredients you probably have in your pantry.
Start with about 3 cups cooked chopped chicken.
Add 16 oz of sour cream to the chicken.
Add one can cream of chicken or mushroom soup.
Add 3 teaspoons poppy seeds.
Mix well.
Spray a cooking dish with non stick spray.  Add the casserole mixture to the pan.
Preheat oven to 350.
Take one sleeve of buttery crackers and place in a zip lock bag.  Using a rolling pin or something else you have crush the crackers.
The crackers are nice and crushed.
Melt 1/4 cup of butter.
Add the crackers to the butter.
Mix well.
Sprinkle the crackers on top of the casserole.  Place in the preheated oven and bake for about 40 minutes.
The finished product.
We had this little casserole with a green salad.  You could even serve over rice.

3 cups chopped cooked chicken
1 can cream of chicken or mushroom soup
1 16 oz container sour cream
3 teaspoons poppy seeds
1 sleeve of buttery crackers crushed
1/4 c butter melted
