Cheesy Pork Chops

I was looking for something different to do with my pork chops tonight.  This was easy and good, two of the things I look for in new recipes.
You can use any kind of cheese that you like.
Spray a cookie sheet.  Lay out the pork chops.  Sprinkle with seasoning salt on both sides.  I wish I had used a sheet with sides because juices ran off into the bottom of my oven.  Now I am going to have to clean my oven.
Take a teaspoon or so sour cream and put on a chop.
Spread the sour cream on top of the chops.  I used an offset knife to spread it on top.
I freshly grated some cheese.
Put some of the cheese on top of each chop. Place in a preheated 350 oven.  If the chops are thick bake for 35-40 minutes.
Fresh from the oven.  A pepper jack cheese would be good to give it a little kick.

Pork chops
salt, pepper, or seasoning salt
sour cream
grated cheese

Preheat oven to 350.  Bake for 35-40 minutes.

Funfetti Chocolate Chip Blondie Bars

We were going on a trip for the weekend and I wanted to make something for the trip.  I found this recipe and it looked festive with the sprinkles.  They turned out very good and I have had request to make them again.
For the holidays you could use color specific sprinkles which would be fun.
Start with 2 sticks butter that are at room temperature.
Add 1 cup sugar to the whipped butter.
Add 1 cup brown sugar
Mix well and then add two eggs.
Add 1 1/2 teaspoons vanilla
1/2 teaspoon salt
1 teaspoon baking powder
2 1/2 cup all purpose flour
3/4 cup sprinkles
1 1/4 cup semi sweet chocolate chips.  I think I would use mini chips next time.
Mix well.
Spray a 9x13 baking dish.  Spread the dough into the pan and try to even it out.  Place in a preheated 350 oven.  Bake for 25 minutes or until the edges are just golden.
Let cool completely before you cut into pieces.

1 cup butter softened
1 cup sugar
1 cup brown sugar
2 eggs
1 1/2 teaspoon vanilla
1/2 teaspoon salt
1 teaspoon baking powder
2 1/2 cup all purpose flour
3/4 cup sprinkles
1 1/4 cup semi sweet chocolate chips

Preheat oven to 350.  Bake for 25 minutes.

Cheese and Bacon Okra Poppers

I have the okra monster at the house this weekend and I was given some really big okra.  I saw this recipe and thought that the big okra would be good like this.  You could make jalapeƱo poppers the same way if you like.
Look at all that okra.  I have other things I will have to make with it.
Take 8 oz of cream cheese that has softened.
I added some pepper
Salt
A little chili powder
Cut some slices of bacon in half.  Cook just a little bit in a skillet.
Add some grated sharp cheese to the cream cheese.
Drain the bacon.
Gently slice off the front of a piece of okra.
Pull all the seeds and membranes out of the inside.  There were some large seeds.
Using a small spoon add some of the cheese mixture in the middle.  Had I had a little more time I could have put it in a plastic bag and pipped it in the middle.
Wrap the bacon across the top and secure with a skewer.  Had I thought about the okra being so large I would not have cut the bacon.
The pan is ready to put in a preheated 425 oven about 6 inches from the heat.  Cook for about 8 minutes.
I couldn't get the rack that close but they turned out pretty good.

Cheese and Bacon Okra Poppers Recipe

Bacon
okra
1 8 oz brick of cream cheese- the recipe calls for chive cream cheese
1/2 cup extra sharp cheddar cheese 
1/4 cup green onions chopped- I didn't have these
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper


Preheat oven to 425.  Bake for about 8 minutes.

Slow Cooker King Ranch Chicken

Back in the early spring a friend and I went to lunch at Victoria's.  Their special that day was King Ranch Chicken.  We both ordered it and after it arrived I told her I thought I could make this at home.  Well, it has been a while but I finally got around to making this at home.  This version is a crock pot version and I let it cook a little too long. Next time I don't have to plug it up at 8:00 in the morning I can wait a while.
The recipe called for chips but I bet you could use corn tortillas instead.
Place a layer of taco chips in the bottom of the crock pot.
Chop up the cooked chicken.
Chop an onion and add to the chicken.
Add a can of Rotel tomatoes.
1 cup chicken broth.
1 can cream of chicken soup
1 can cream of mushroom soup
Mix well.
Add half the mixture on top of the chips.
Add grated cheese on top of the chicken.
Add another layer of chips
Layer of chicken
Lots of cheese.  Cover and turn on low.  Cook for about 6 hours.
Ready for dinner.  This might have been a good recipe for using the crock pot liners.
