Cheesy Mexican Rice

I was making tacos the other night and wanted something else to go with them.  I looked through my Mexican board on Pinterest and found a two recipes for Mexican rice.  I only had the ingredients to one.  This one would not have been my first choice, but it turned out well.
You just need some rice, Rotel tomatoes and chicken broth.
Measure out 1 cup long grain rice.
2 cups chicken or vegetable broth.
Saute the onions in a little olive oil.
Add the rice to the onions and let it cook for 2-4 minutes.  Stirring frequently.
The rice that has been toasted.
Add the Rotel tomatoes.
Add the 2 cups broth.  Stir well.  Bring to a boil.
Once it starts to boil..
Cover and simmer on low for 20 minutes.
Fluff the rice.
Add some shredded cheese.
Mix well and enjoy.

1 onion chopped
1 cup long grain rice
1 can Rotel tomatoes
2 cups chicken or vegetable broth
2 Tablespoons olive oil
salt
shredded cheese
