Zucchini Chocolate Chip Cookies

More of that zucchini to use this weekend.  These cookies are a good use of that zucchini. Just don't tell your family that there are vegetables in them before they try them.

You might can see some of the green specks of zucchini in those cookies.
There's some good stuff in these cookies.
Start with 4 Tablespoons of coconut oil.
Melt it and let it cool to room temp.
Grate 1 cup zucchini.  I grate it on an old dish towel.  It makes it easier to squeeze out the liquid.
1 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2cup brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla
Add the cooled 4 Tablespoons coconut oil
2 cups old fashioned oats
1 cup shredded zucchini
1/2 cup coconut
3/4 cup semi sweet chocolate chips
Make sure it is mixed well.
Scoop out onto a parchment lined cookie sheet.  Place in a preheated 350 oven for 10-12 minutes.
When you take the cookies out they will look like they might not be done on top.  Let them sit on the pan until they cool.
Then plate them up and enjoy.
Your family might not see the zucchini in these cookies.  I bet they won't know they are in there if you don't tell them.

Zucchini Chocolate Chip Cookies Recipe

1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
4 Tablespoons coconut oil melted and cooled
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla
1 cup shredded zucchini
2 cups old fashioned oats
1/2 cup coconut
3/4 cup semi sweet chocolate chips

Preheat oven to 350.  Bake cookies for 10-12 minutes.
