Cherry Cobbler Cookies

This was a great year for fresh cherries.  In addition to having great cherries there were great recipes available for using the cherries.  Here is another new cherry recipe.  If you missed out on the cherries this year save the recipe for next year.  I have put a batch in the freezer so I can enjoy them for months to come. 

I had to bake a couple to try them.  I had to make sure they were edible, right?  They were.

This recipe uses cherry yogurt so the texture is a little different.
Take 1 stick of butter
Melt it in the microwave, then let it cool for a few minutes.  This is a great time to pit your cherries.
Measure out 8 oz of tart cherry greek yogurt.  Most containers are 5 oz so it might take almost 2.
Add the yogurt to the melted butter.
Add 1 cup sugar
1 teaspoon baking soda
1/2 teaspoon sea salt
2 1/2 cups all purpose flour
Mix well.  Also add 1 Tablespoon vanilla and 1 teaspoon almond extract.
Pit and chop 1 1/2 cups cherries
This cherry pitter is the best kitchen gadget I have.  It pits them so easily.
Add the cherries to the batter.
Scoop out and add to a preheated 350 oven.  Bake for 18-20 minutes.
I scooped this up and put in the freezer for later.  Make sure to label the bags.
Now enjoy these delicious cookies.

Cherry Cobbler Cookies Recipe

2 1/2 cups all purpose flour
1 cup sugar
8 oz tart cherry greek yogurt
1 1/2 cups cherries
1 stick butter, melted
1 T vanilla
1 teaspoon almond
1 teaspoon baking soda
1/2 teaspoon sea salt
Bake in a preheated 350 oven for 18-20 minutes.
