I have found that potatoes are a very versatile vegtable. They will go with just about anything and can be made dozens of different ways. These are a quick and easy to make and will go with just about anything. I like to pare the with a steak for something different than baked potatoes.
I use the homestyle Simply Potatoes that you can buy in the refrigerator section of the grocery store. Publix will run them on sale buy one get one free every now and then and it is a great way to get some a nd have them on hand in the fridge. Add to them a little chopped onions and peppers (because they go with everything too) and topped off with cheese.
Melt a small pat of butter in the bottom of the skillet. I may cook with Paula Deen skillets but I don't use quite as much butter as she does.
Saute' the peppers and onions in the melted butter just until they are a little soft.
Add the potatoes to the skillet and mix well. You might want to add a little more butter if it is a little dry in the skillet.
Let them get a little brown on bottom. Start turning them so they do not burn.
When they get as brown as you want them add some cheese on top and gently fold the potatoes over so the cheese melts and gets gooey.
Dish up in a bowl or serve from the skillet they are a great side dish to go with grilled meats.
