Cheese Muffins

Long before Red Lobster had their cheese biscuits I was making cheese muffins and my husband says I don't make them often enough now. They are the perfect addition to the spaghetti from yesterday.  This is a basic muffin recipe that I add cheese to.  I halved the recipe today so that I only made 6 muffins.  The recipe is very easy to half.
Milk, plain flour, sugar, oil, baking powder, salt, an egg, and cheese is all that is needed to make these delicious muffins.
I beat one egg in a bowl.
To that I added just under a 1/2 c of milk and 1 T of oil.  Stir together.
In a separate bowl mix the dry ingredients.
Add the cheese.  This was what was left in a bag and it might have been just under 3/4 c.  Cheddar cheese is actually best in this recipe, but you can use whatever you have on hand at the time.
Add the wet ingredients to the dry and mix until incorporated.
Spray your muffin pan with non stick spray.  If you are using a 12 cup muffin pan and are only making 6 add some water to the unused cups. Insert into a 400 degree oven and bake for about 20 minutes.

Split and add a little butter and they are so good.

Cheese Muffin Recipe

This is for the whole recipe that makes 12.

2 c all purpose flour
1 T baking powder
1/2 t salt
2 T sugar
1 egg beaten
1 c milk
2 T oil
1 1/2 c grated cheese
Mix the dry ingredients together.  Combine the wet ingredients.  Add the liquid to the flour mixture  at once; stir just enough to moisten the flour.  The mixture will have a rough appearance.  Fill well greased muffin cups two thirds full.  Bake at 400 for about 20 minutes.
