Sugar Free No Bake Chocolate Oatmeal Cookies

Everyone loves those no bake chocolate oatmeal cookies.  I know they go by many different names.  I have a hard time with those cookies because I don't know if I don't cook it long enough or what but they don't like getting firm.  So when I found this recipe I was excited.  This one doesn't have a certain boiling time you just melt, mix, and place in the freezer. Easy and taste great.

They look like the regular chocolate oatmeal cookies, except these are sugar free.
You know honey and coconut oil are good for you.
Start with 3/4 cup honey in a saucepan.  Spray the measuring cup first and it will just slide right out.
2/3 cup peanut butter.  The recipe calls for organic or natural peanut butter.  Use what you have.
1/2 cup coconut oil.  Coconut oil is usually solid so I eyeballed the 1/2 cup then wondered how close.  So I melted it in the microwave for like 20 seconds.

Put the saucepan on medium heat to melt everything.
Stir a little.
Once it is all melted add 1/3 cup unsweetened cocoa.
3 cups quick oats
1/4 teaspoon salt
1 1/2 teaspoon vanilla
Mix it all really well.
Then take a cookie scoop and scoop out cookies on a parchment lined cookie sheet.  Place in the freezer for 15 minutes.
After the 15 minutes take out of the freezer and place in a bowl or plate.  You can keep them in the freezer if you like them that way or in the fridge.
They are really good and will disappear quickly.

3 cups quick oats
3/4 cup honey
2/3 cup peanut butter
1/2 cup coconut oil
1/3 cup unsweetened cocoa powder
1 1/2 teaspoon vanilla
1/4 teaspoon salt
