Lofthouse Cookies

Today I am sharing with you a recipe for Lofthouse cookies.  You might not know what Lofthouse cookies are but I am sure you have seen them.  They are the brightly colored cookies with sprinkles on top that you find in the bakery section of your grocery stores.  They are soft sugar cookies with a little touch of icing.  Now some have flavored icing but these are just vanilla.  You can make the icing any color you like so you know mine are crimson. To me they taste better the longer they sit.  
See aren't they pretty.  I found this great red and white sprinkles with little footballs. 
This starts out as a basic sugar cookie but with sour cream.  Plan ahead because they need to stay in the fridge overnight.
Start with one stick softened butter.
1 cup sugar
Cream the sugar and butter and then add 2 eggs one at a time.
1 teaspoon vanilla
3/4 cup sour cream
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3 cups all purpose flour
Mix well. The dough is very, very sticky.  Wrap in plastic wrap and place in the fridge overnight.
The next day take out the dough and place on a well floured surface.
Roll out to about 1/4 inch thick.
Use a round cutter up to 2 inches.  I'm not sure what the size of this cutter is.
Place on a parchment lined cookie sheet.  Place in a preheated 425 oven.  I know that seems high for baking cookies but that is what it said.  Bake for 6-8 minutes.  Be careful and don't let them get too brown.  A few of mine got really brown on bottom.
Take out of the oven and immediately remove from the cookie sheet.
Now for the icing.
1 stick softened butter
3 cups powdered sugar
1 teaspoon vanilla
I added the color along with the other ingredients so it would get mixed well.  Red is a hard color.  I found this crimson color that says 40 drops.  So I started with 20 and checked it and it needed the other 20.
Just enough heavy cream to make it the right consistency. About a Tablespoon
Mix, Mix, Mix.
Color is about right.
Then just ice the tops.
Add the sprinkles

Lofthouse Sugar Cookies Recipe

3 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup softened butter
1 cup sugar
2 eggs
1 teaspoon vanilla
3/4 cup sour cream
Preheat oven 425.  Bake 6-8.

Icing
1/2 cup softened butter
3 cups powdered sugar
1 teaspoon vanilla
heavy cream to make spreading consistency
food coloring
sprinkles
