Strawberry Banana Bread

Everyone likes banana bread but sometimes you want to try something a little different.  That is where this strawberry banana bread comes in.  Try it the next time you have some overripe bananas.
Looks like the makings of any ordinary banana bread except no nuts and strawberries instead.
Start with 4 ripe bananas.  Put them in a bowl and mash them.
But before you start mashing bananas, go ahead and melt 1/3 cup of butter so it will have time to cool before you need it.

Mash the bananas well.  After I get them started with a fork I use the mixer to help make them smooth.
Then add the butter.
Add 1/4 cup sugar
1/4 cup brown sugar
Then mix well.
Add 1 egg
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 cup all purpose flour
1/2 cup whole wheat flour
Wash, hull and chop one cup of strawberries.
Add those and lightly mix.
Spray a 4x8 loaf pan and add the dough.  Place in a preheated 350 oven and bake for 1 hour.
You will want to check the loaf before you take it out.  I used a skewer to get to the bottom.  It did take some additional time on mine.  I added 2-3 minutes at a time.  When you take it out of the oven, let stand in the pan for 5-7 minutes before removing from pan.
Then remove from pan and let cool completely before covering.

Strawberry Banana Bread Recipe

4 very ripe bananas
1/3 cup melted butter
1/4 cup sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 teaspoon baking soda
pinch of salt
1 cup all purpose flour
1/2 cup whole wheat flour
1 cup diced strawberries

Preheat oven to 350.  Bake for about 1 hour
