This recipe is very similar to my chicken and potatoes that I have made for years without a recipe. I did not realize it until I was making it today.
In a large measuring cup pour 1 1/4 cup milk
Add a can of cheddar cheese soup to the milk, and whisk.
Mix it well.
In a sprayed 9x13 baking dish pour a little in the bottom of the dish.
Slice potatoes thin and line the bottom.
Salt and pepper the potatoes
Add a few slices of onion.
Pour a little more of the cheese soup
Add two more layers of potatoes and onions. Covering with the cheese soup.
Cover and place in a preheated 350 oven and let cook for 30 minutes.
Cook 8 slices of bacon either in a skillet, microwave, or oven. I saved a little bit of the grease from the bacon and put in the skillet.
Here is the cooked bacon.
Heat the oil in the skillet. Put some cut up pieces of chicken in the skillet and season with salt and pepper and a little garlic if you like. You are not going to completely cook the chicken just get a little sear on the chicken.
You just want it a little brown
After 30 minutes take the potatoes out of the oven and uncover.
Put the pieces of chicken on top and any extra onion piece.
Pour the rest of the cheese soup on top.
Add the crumbled bacon on top.
Cover again and put back in the oven for another 30 minutes. Check the potatoes and see if they are completely cooked. We had to put them back in the oven because they were not completely cooked.
Grate about 1 cup of cheese. I used monterey jack cheese for a little zip.
Take it out of the oven and uncover.
Add the grated cheese on top and put back in the oven for another 5-10 minutes.

All that good melted cheese and bacon. It is a keeper.
Smothered Chicken & Cheesy Potato Casserole Recipe
4-5 medium russet potatoes
1 can cheddar cheese soup
1 1/4 cup milk
8 slices bacon
chicken tenderloins
4 oz shredded cheese
salt and pepper
onion
Preheat oven to 350 Bake covered 30 minutes and then add chicken cover and cook another 30 minutes. Add cheese and cook uncovered 5-10 minutes.
