Homemade Easy Red Enchilada Sauce

I had never looked for or seen a recipe for enchilada sauce.  This one looked really easy so I had to try it.  It was good and when you have the extra time to make it it is worth it, but the can stuff is good in a pinch.
The one thing I like about making my own is I know what is going into the sauce.
We are going to make a roux.  Start with 2 Tablespoons vegetable oil
2 Tablespoons all purpose flour
2 Tablespoon chili powder
Whisk well.
Once whisked it is nice and smooth.
Cook for 1 minute after it starts to boil.
After it starts to boil, add 2 cups water
Add 1 3 oz can of tomato paste
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt.  The recipe called for 3/4 teaspoon salt but again I thought it was too much.
Whisk well and let the sauce simmer.  Once it starts to simmer it will thicken up a little.
