She says she doesn't cook but she does make this cake to take to people when they are sick or there's been a death. Give it a try.
It's called 7-Up cake but you could use any kind of lemon lime soft drink. I also used diet.
Start by creaming 2 sticks of softened butter and 1/2 cup shortening. My shortening happens to be butter flavored shortening.
Adds 3 cups sugar. I know that is a lot of sugar.
Add 1 1/2 teaspoons vanilla.
1 1/2 teaspoon lemon extract.
Add 5 eggs one at a time.
Add 3 cups all purpose flour. Alternate with the 7 up.
7 oz of 7-Up.
Mix well.
Grease and flour your tube pan really well. She says that this can also be baked in 2 smaller pans.
Pour evenly into the pan. Then place in a 300 preheated oven. Bake for an hour ot until a knife or skewer comes out clean.
Look at that nice crust. Let cook in the pan for 30 minutes. But no longer.
Okay mine didn't come out too clean. I always have trouble with that pan. Might be time to get a new pan. But when things don't turn out the way you want just rename it. Or in this case you can cut it up and make a triffle with fruit and pudding. I am just having it here for us this week so no big deal if it doesn't come out clean. It's okay if things don't turn out the way you want them too. It still tastes good.

2 sticks butter softened
1/2 cup shortening
3 cups sugar
5 eggs
1 1/2 teaspoons lemon extract
1 1/2 teaspoons vanilla
3 cups all purpose flour
7 oz 7 Up
