Here's another use for all that zucchini you will have in the garden this year. You can amaze your friends and family when you tell them this cake has zucchini in it, because they will never know if you don't tell them.
Chocolate and zucchini what could be better?
Grate 2 medium zucchinis
Well Bounty isn't as strong as they want you to believe because I was going to use it to squeeze out the liquid and they fell apart.
So bring out the kitchen towel. Zucchini has a lot of liquid in it and you need to get as much out of it as you can.
So far this is what I have gotten out.
In a bowl add 2 cups sugar
3 eggs
1 1/2 cups applesauce
Give the zucchini one more squeeze before adding it to the mixer.
Dump it in.
Cut up 2 Tablespoons butter that is softened. If you forget to soften the butter you can grate it and it will work fine.
Add 1 Tablespoon vanilla
In a second bowl, measure out 1 cup of mini chocolate chips
Measure out 1 cup of flour
Pour a little of the flour on the chips
Mix it well. The flour on the chips will help keep them from settling in the bottom of the pan.
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
7 Tablespoons cocoa powder. Mix on low speed or you will be like me and have cocoa powder all over my kitchen.
1/2 cup wheat flour
Mix well. This is a very liquid batter.
Pour into a sprayed bundt pan. Place in a preheated 350 oven. Bake for 60-70 minutes until a toothpick inserted comes out clean.
Fresh from the oven. Let sit in the pan for about 10 minutes.
Invert onto a plate.
After the cake has cooled it is time to make the glaze.
In a microwave safe bowl, place 3 Tablespoon butter
1 Tablespoon light corn syrup
Add 3/4 cup semisweet chocolate chips. I didn't have semisweet chips so I used milk chocolate. I don't know if it changed the taste or texture or not. Place in microwave and heat for 30 seconds at 50% power until it is smooth.
Add 1/4 teaspoon vanilla after the chocolate is melted.
Pour around the top of the cake.
The finished product.
Now does that cake look like it has zucchini in it?

2 medium zucchinis
7 Tablespoons cocoa powder
2 Tablespoons butter softened
3 eggs
2 cups sugar
1 1/2 cups applesauce
1 Tablespoon vanilla
1 1/2 cups all purpose flour
1/2 cup wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup semi sweet mini chocolate chips
Chocolate Glaze
3/4 cup semisweet chocolate chips
3 Tablsepoons butter
1 Tablespoon light corn syrup
1/4 teaspoon vanilla
