Cheddar Cauliflower Popcorn

I love roasted cauliflower and adding cheese just makes it that much better.  I had about a half a head of cauliflower that needed to be used and this was a good use of the cauliflower.
It doesn't take much make this dish and it makes a great side dish.
Cut up about 3 cups cauliflower into small florets.
Drizzle with a little olive oil.
Toss well.
Spray a cookies sheet.  Layer the cauliflower on the sheet. Place in a preheated 450 oven for 18-22 minutes.  About halfway through pull them out and stir.
About half way through the cooking.
At the end of the cooking.  I could have left the florets a little bit bigger.
Put in a bowl and sprinkle with a little cheese.
The cauliflower is so good.  The roasting brings out a sweet flavor to the cauliflower. The good thing about this recipe is that you can use as much or as little cauliflower as you want.

Cheddar Cauliflower Popcorn Recipe

3 cups small cauliflower florets
1 Tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
1/3 cup finely shredded cheese
