Crock Pot Sloppy Joe Casserole

I like sloppy Joes so I like finding new ways to fix them.  This is an easy crock pot meal.  The only problem is that you can't let it cook all day it only takes 4 to 41/2 hours.  Be hard to make and let cook while you are gone to work unless you have a crock pot that has a timer.
Very easy to put together.
Chop and cook the medium onion in a little olive oil.
Add the ground beef.  Brown and then drain.
Put the thawed shredded hash browns in a bowl.
Add a can of cheddar cheese soup to the potatoes.
Beat one egg.
Add it to the potatoes.  Mix well.
Put the potatoes in the bottom of a sprayed crock pot.
Add the sloppy joe mix to the ground beef.
Pour the beef mixture on top of the potatoes.
Spread it around to cover the potatoes.  Place the lid on the crock pot, and cook on low for 4 to 41/2 hours.
About 10 minutes before serving sprinkle shredded cheese on top.  Replace the lid and let melt.
The cheese is all melted and ready to eat.
Serve with some fresh green beans.

1 32 oz pkg frozen shredded hashbrown potatoes thawed
1 can condensed cheddar cheese soup
1 egg lightly beaten
1 teaspoon salt
1/2 teaspoon pepper
1 lb ground beef
1 small onion chopped
1 can sloppy joe sauce
shredded cheddar cheese
