Loaded Baked Potato Grilled Cheese Sandwich

I love to find new ways to make grilled cheese sandwiches.  Grill cheese sandwiches are my go to lunch when there isn't anything else in the house.  I like experimenting with different kinds of cheeses and think I like provolone and mozzarella cheese best.  Forget those Kraft singles.  This sandwich would probably be better if I had potato bread but it was pretty good on my Mt White bread.
Might be a little more labor intensive than you would like for lunch but so worth it.
Cook a couple of pieces of bacon in the microwave.
Spray one side of the bread with butter.
Turn it over and add a thin layer of sour cream on the inside piece of bread. Don't add too much because it will get soggy.  Nothing worse than a soggy sandwich.
Add shredded cheese.  This is a mix of colby monterey jack cheese.
Chop a green onion.
Chop the cooked bacon.
Add that on top of the cheese.
Top with another piece of bread that has a thin layer of sour cream on the inside.  Then spray the outside with butter.
Place in a skillet on medium heat.  You don't want it too hot because the outside with toast and the cheese won't be melted. The recipe calls for cooking in a panini press, but I don't have one, yet.
Cut and serve.  Taste just like a loaded baked potato.  The green onions really make this sandwich.

2 slices of bread
softened butter or spray butter
sour cream
shredded cheese
2 slices bacon cooked and chopped
1 green onion
