This is a very easy, perfect, chewy, delicious cookie. I think that is all the adjectives I can use for this recipe. Butterscotch and oatmeal is the perfect combo. These cookies also remind me of fall too.
These are so good and chewy.
You can use either regular or quick oats for this recipe. Whichever ones you have the most of. By the way, Publix has their oats on sale this week by one get one free. So that is a great excuse to make these.
Start with 1 cup softened butter
1 cup brown sugar
1/3 cup sugar
Mix this well and then add two eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon nutmeg
1 1/2 teaspoon cinnamon
1 1/3 cups all purpose flour
3 cups oats
2 cups butterscotch chips
Dip the dough out onto a parchment lined cookie sheet. Place in a preheated 350 oven. Bake for 7 minutes. Let cool on the sheet for a few minutes.
Dive in.
