Baked Apple Fritters

Another really good apple recipe.  Everyone likes apple fritters but most people are trying to stay away from fried foods so this recipe is the best of both worlds. No frying!
These are so good especially when they are warm from the oven.
It might not take both apples.
Start with 1/4 cup softened butter.
3/4 cup sugar
Beat until fluffy.
Add 1 egg.
1 teaspoon vanilla
1 cup plain yogurt
2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg.  The nutmeg really makes this recipe.
1 1/2 cup all purpose flour
1 1/2 cup chopped apple.  I peeled the apples.  You might could try it with the peel left on.
Mix well.
Put into greased mini muffin pans.
Move the rack in the oven to the second from top place. Then bake the muffins at 350 for 15-17 minutes.
Remove from oven and turn the broiler on high.  Wait 3 minutes and then return the pan to the oven.  Watch them to make sure they do not get too brown.
After their second baking.
Pop out of the muffin tin while still warm.
Dust with powdered sugar.
Make sure they have a nice coating of powdered sugar.
Then enjoy them.

Baked Apple Fritters Recipe

3/4 cup sugar
1/4 cup butter softened
1 egg
1 teaspoon vanilla
1 cup plain greek yogurt
1 1/2 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups diced apples
powdered sugar

Preheat oven to 350.  Bake for 15-17 minutes.  Move the oven rack to the second from top.  Remove muffins.  Turn broiler on and wait 6 minutes. Place muffins back in oven. Watch them.
