Miss Kay's Tater Tot Casserole

This is another recipe I found in Miss Kay's new cookbook. It was a hardy meal that would feed a lot.  We had leftovers for another night.  I would probably make this again but make a few minor changes.
Meat, veggies and cheese all together in one dish.
I think I would use the potato rounds instead of tots next time.
Chop one onion and saute in some olive oil.
Add the ground beef and brown, drain.
Add 2 cups mixed veggies thawed.
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoon Italian seasoning.  I would probably use only 1 next time.
In a bowl mix 1/2 cup sour cream
1 can of cream of mushroom soup.
In a 9x13 pan layer the beef-veggie mixture on bottom.
Spread the sour cream-soup mixture on top.
Then a layer of cheese
Add the tots on top. Place in a preheated 350 oven.  Bake for 40 minutes.
After the 40 minutes.
Add some more cheese on top.  Put back in the oven for about 5-10 minutes.
After the second time in the oven it is nice and golden brown with bubbly cheese.
Dish up and enjoy.

Miss Kay's Tater Tot Casserole Recipe

1 1/2- 2 lbs ground beef
1 medium chopped onion
2 cups frozen mixed veggies thawed
1 teaspoon salt
1/4 teaspoon pepper
1-2 teaspoon Italian seasoning
1 cup cream of mushroom soup
1/2 sour cream
2 cups cheese
1 32 oz bag tater tots

Preheat oven to 350.  Bake for 40 minutes.
