Mexican Chicken

I found this easy recipe on Pinterest and could not resist trying it.  We were not disappointed.
Very simple ingredients.  Taco seasoning mix, enchilada sauce, chicken, cheese and green onions, can't go wrong with that.
Sprinkle the chicken with the taco seasoning mix.
Make sure they are covered well.
You can grill the chicken outside, grill it inside, or bake the chicken.  I chose to use my George Forman grill inside.
Nice and golden brown.
Cut the chicken into bite size pieces and put in an 8x8 pan that you have sprayed with nonstick spray.
Pour the small can of enchilada sauce over the chicken.
Stir the chicken around in the sauce.
Top with shredded cheese and place in a preheated 350 degree oven.  Bake for 10-20 minutes until the cheese is hot and bubbly.
Serve with some Spanish rice. Sprinkle some green onions on top.  Can also have flour tortillas with this as well.


Mexican Chicken

1 lb boneless chicken breast
1 taco season pkg.  You won't use all so store in a zip lock bag for next time.
1 small can enchilada sauce
shredded cheddar cheese
green onions
