One Dish Chicken and Veggies

I found this recipe recently on Pinterest.  What did we do before Pinterest?  I know I printed off a lot of recipes that I will never find again.  I really like having an on line recipe book all nice and categorized.  Now on to the recipe.
This might not be a crock pot dinner but it is just as easy.  You could make it ahead of time and put it in the fridge until you come home from work and then pop it into the oven.
Cube up 2 or 3 potatoes depending on their size.
Layer them on one size of a 13x9 baking dish that you have sprayed with non stick spray.
Trim and cut the chicken breast into cubes and layer them next to the potatoes.
Now add green beans to the other side.  These can be fresh, frozen or canned green beans.  I happened to have some fresh ones this time so that is what I used. I added a small onion on top just because I think onions go well with everything except maybe cake.
Sprinkle an envelope of zesty Italian dressing mix over the meat and veggies.
Melt one stick of butter and drizzle that across everything in the pan.
The butter is nicely drizzled all over the pot.
Cover well with foil and place in a preheated 350 degree oven.  Cook for about 1 hour.

It is a really nice one pot meal.  As we were eating this for dinner we were talking about some variations that could be made.  You could swap out the green beans for broccoli.  Also you could just have a dish of veggies and grill some chicken to go with it.  Broccoli, cauliflower, carrots and potatoes would all be really good fixed this way.  You could also try some pork loin pieces in place of the chicken too.  Hope you will have fun experimenting with this dish.
