Jello cookies

I was wanting to make something sweet for dessert last night. So I was searching through my Pinterest boards looking for something that would require a trip to the store.  After a quick check of the pantry these cookies fit the bill.
Not much to these cookies.  Most of the things you have in your pantry.
Soften 3 sticks of butter.
Cream the butter with 1 c sugar.
Add one egg.
Add 1 teaspoon vanilla
Add 1 teaspoon baking powder
Now add 3 1/2 c plain flour.  Mix well between each cup.
The last 1/2 c of flour.
Roll the dough in a ball.  Then you will want to cut it into four equal pieces.  Or as equal as you can.
Take 1/4 of the dough and add 2 tablespoons of jello powder.  This one is strawberry.
I decided it was easier to mix in a bowl.  I could have used a young child for the mixing of the jello.
Pour the rest of the jello in a bowl and make small balls and roll in the jello powder.

I chose to use a fork like with peanut butter cookies to flatten them.  I sprinkled a little more jello powder on top too. Place in a 350 degree oven.  Bake for about 8 minutes.  Let sit on the cookie sheet for about 5 minutes.

The first batch is cooked.
The peach batch.  I added a little bit of food coloring to it to make it a little brighter.
The cherry batch.
The last batch was apricot.  They are nice and bright.  These would be so cute for a birthday party in the party colors.

Jello cookie recipe

3 1/2 cup plain flour
1 teaspoon baking powder
1 1/2 c butter softened
1 c sugar
1 egg
1 teaspoon vanilla
4 3oz pkg of jello any flavor

Preheat oven to 350.  Bake for 8-10 minutes.
