Tex Mex Cowboy Casserole

Sometimes you just need to try something different.  You lay out some ground beef for dinner but you just don't know what you want to make with it.  Nothing sounds good and you don't want the usual, so what do you do?  You go spend some time on Pinterest to look for ground beef recipes.  That is what happened to me last week.  Well I found this casserole and I feel like I should have invited John Wayne to come join the chuckwagon.
This was a good and filling meal.  There might be a few things I would do differently next time though.
This recipe uses Manwich sauce as it's base.
In order to cut down on dirty dishes, boil the noodles first so you can reuse the pan. 1 1/2 cups dry elbow macaroni
Chop the onion.
Wash and drain a can of black beans.
Drain the pasta.
Saute the onion in a little olive oil in the pasta pot.
Brown the ground beef.  Drain.
Then add the black beans.
A can of drained corn.
Add the Sloppy Joe Sauce
Fill the can with water and add.
1 Tablespoon steak sauce
1 1/2 teaspoon cumin
1 teaspoon garlic
Mix well.
Add the cooked macaroni
1 cup shredded cheese
Sprinkle the cheese around on top. Stir until melted. The recipe also calls for 1 cup of thick and chunky salsa and I didn't have any but it was fine without it.
Then dish up and enjoy.  I added a little more cheese on top.
