Funfetti Cake Batter Dip

Football season is really hard for me this year.  Not the actual games but our tailgate treats.  Not having a working kitchen I am having to find recipes that do not need to be baked.  It's been kinda hard.  So we are doing lots of dips with fruits.  That is probably not a bad thing, the fruit is good for us.
It makes a really pretty tray though.  The green apples were really good with this dip.
You don not have to add extra sprinkles if you do not want to.
Start with one box of funfetti cake mix.
2 cups vanilla yogurt.  You could probably use Greek yogurt if you like.
Start mixing.
Add in the 2 cups of Cool Whip.
Mix well and cover and put in the fridge to chill at least 2 hours.
Serve with vanilla wafers, fruits, graham crackers, animal crackers, or anything you like.

1 box Funfetti cake mix
2 cups Cool Whip lite
2 cups vanilla yogurt
sprinkles

Easy No-Bake Butterfinger Pie

Another of my favorites this year.  Of course you see that no baked in the title. There will be lots of those in the near future.  I hope you like them.  One thing I have found with no bake recipes, they are usually very easy and have few ingredients.  These are a great way to teach young cooks.  They can whip something up, that doesn't require using the oven and they taste good.  Little hands in the kitchen can be fun.
Look at all that chocolate and peanut butter goodness.
This is a larger bag of Butterfingers than the recipe called for.  I could not find the right size.  So I guess I will have to find something to do with those couple of left over Butterfingers.
Start with a softened 8 oz block of cream cheese.
Using a food processor, a bigger one if you have it, chop up 12.5 oz of Butterfinger fun size bars.
Add to the cream cheese. Keep some out for the topping.
Mix well.
Fold in 1 container of Cool whip
Mix until well blended.
Pour into a pre-made graham cracker crust.  Smooth out the top.
Sprinkle more of the Butterfinger crumbs on top. Chill for 2 hours before serving.
Cut and serve.

1 12.5 oz bag fun size Butterfinger candy bars, crushed
8 oz cream cheese softened
12 oz container Cool Whip
1 pre-made graham cracker crust

Johnny Appleseed Day

Today is Johnny Appleseed Day.  The story that I always heard in school was that Johnny aka John Chapman was a dreamy young man that wandered the country planting apple seeds.  But research now shows that he carefully and in an organized way planted apple trees during a period of 50 years. He bought and sold tracts of land and developed thousands of productive apple trees.  So many of the apples and variety of apples we have today can be due to Johnny Appleseed.  So let's honor him with something apple today.

Honey Ham Biscuit Sliders

These are simple sandwiches that are great for either breakfast or lunch.  They are very easy to put together and can be baked in a toaster oven.

The box is the cheese I used for this recipe.  More about that later.
Start with one can of Grands Jr Butter Tasting Biscuits 10 count.
Separate each biscuit in half.
Put a little honey mustard on each half.
I made a trip with a friend to Mississippi State a couple of weeks ago.  They have a store and they sell things they make on campus. One of the things is cheese.  This is the Vallagret cheese it is a blend of Swiss and cheddar.  It is really good. They also make ice cream.  Remember me posting a picture of muscadine ripple ice cream?  That was at this store. I want to make another trip and buy some more cheese.
Place some cheese on each half.
Put some ham on one side.
Cover with the other half.
Put them in a lightly sprayed 9 inch pan.
Brush the tops of the biscuits with 1 Tablespoon melted butter. Preheat oven to 400.  Bake for 12-15 minutes.
Measure out 2 Tablespoons honey
Heat the honey in the microwave for 20 seconds.
Brush the honey on top of the biscuits when they come out of the oven.
Very good and gooey sandwich. The only complaint the husband had was that they needed more meat and cheese.

1 can Grands Jr Butter Tasting biscuits 10 count
1/2 lb deli ham, shaved
1 cup shredded swiss cheese
1/4 cup coney mustard dressing
1 Tablespoon butter melted
2 Tablespoons honey

Preheat oven to 400.  Bake for 12-15 minutes.

Peanut Butter Fruit Dip

This recipe is great because it only takes 3 ingredients, and it is the perfect compliment to fruit.
It was opening week of football season so we had to have some snacks for the day.
A little honey with yogurt and peanut butter.
Start with 1/3 cup creamy peanut butter
Add 2- 5.3 oz containers Vanilla Greek yogurt or about 1 cup
Then add about 1 tablespoon honey.
Mix well and then cover and store in fridge.
Then serve with your favorite fruits.
