Baked Zucchini Fries

During the summertime zucchini is plentiful and I like to find new ways to use it. One day soon I might have to make a post of all the different zucchini recipes that I have made.
Panko is the secret ingredient in this recipe.  It is what gives the zucchini it's crunch.
There are several steps to this recipe.  I am lining them up before we get started.  In a zip lock bag put 1/4 cup all purpose flour.
Add 1/8 teaspoon salt
In another bowl add one egg and 1 Tablespoon water.  The bowl needs to be big enough to dip the zucchini pieces in.
Whisk the egg and water together.
In another bowl add 1 cup panko bread crumbs
To that add 1/4 cup parmesan cheese
Add 1 Tablespoon Italian seasoning
Mix up those well.
Cut the zucchini in strips or fries.
Line a cookie sheet with foil.
Place a rack on top.  This allows the air to move around the zucchini and make it crisp.
Place the strip in the bag with flour.
Shake well.
Then dip in the egg mixture.
Then roll in the panko.
Place on the rack.
The racks are ready for the preheated oven.  Preheat to 425. Cook for about 15 minutes until they are medium golden brown.
Golden brown and crisp from the oven.
A new way to introduce zucchini to your family.

Baked Zucchini Fries Recipe

1 lb zucchini squash
1/4 cup all purpose flour
1/8 teaspoon salt
1 cup panko bread crumbs
1/4 cup parmesan cheese
1 Tablespoon Italian sesaoning blend
1 egg
