Turkey Wild Rice Soup

Here is another great recipe for using those holiday leftover.  But if you do not have any turkey you can probably use cooked chicken in it's place.
This is another really quick and easy recipe.  It could probably be cooked in the crock pot too.
Chop one medium onion.
Chop up some carrots.  How many depends on whether you use regular carrots or baby carrots.
In a pot cook the onions and carrots in 1/2 c butter until the veggies become softer. The recipe called for celery too but I didn't have any at this time.
Then add 1/2 cup all purpose flour.
Stir that well.
Add 4 cups chicken or turkey broth.
Stir that well.
Add 2 cups chopped turkey
Now add two cups cooked wild rice.  (I used Uncle Ben's wild rice cooked per the directions).
Now add 2 cups half and half cream.
Stir well and add 1 teaspoon dried parsley flakes and salt and pepper to taste.
We had it for dinner with a grilled cheese sandwich.

Turkey Wild Rice Soup Recipe
1/2 c butter cubed
2 carrots finely chopped
2 celery ribs finely chopped
1 medium onion chopped
1/2 c all purpose flour
4 cups chicken broth
2 c turkey chopped
2 cups cooked wild rice
2 cups half and half cream
1 teaspoon dried parsley flakes
salt and pepper to taste.
