Dried Cherries and Lime Shortbread Cookies

When the new Taste of Homes magazine came in and I saw this recipe I knew I would have to try this cookie.  Hope you will give them a try too.
This is a very simple basic cookie recipe.
To two softened sticks of butter add 3/4 cup powdered sugar.  Mix well.
Then add the zest of one lime about 1 Tablespoonful.
Look at all those nice green pieces of zest in the bowl.
Add 2 teaspoons of vanilla
Add 1/2 teaspoon almond extract
Mix that well.
Add 1/8 teaspoon salt
Add 1/4 teaspoon baking powder
Add 2 cups all purpose flour. Mixing well between each cup. The dough is very sticky.
Chop up 1/2 c dried cherries.  I didn't measure the cherries I just kind of eyeballed them.  But then I like cherries.
Add them to the dough.
Scrap down the sides well.
Divide the dough in half and make a log and roll in plastic wrap.  Put in the fridge for a few hours or overnight.
Nice long log of dough.
When ready to bake take out of the fridge and slice into 1/4 inch slices.  Put on a cookie sheet that has been lined with parchment paper.  Place in a preheated 375 oven for about 8 minutes.  Add one minute at a time until they are nice and golden brown.
Cookies before they go in the oven.
Cookies when they come out of the oven.  I really like them because they are not real sweet but think drizzling them with some white chocolate might be nice.  I might have to try that.
