Cinnamon Honey Sweet Potatoes

I found this recipe and I had some sweet potatoes that needed to be used and it was a great fall evening side dish to my pork chops.
Very easy to make and you probably have the ingredients in your pantry right now to make them.
Melt 5 Tablespoons of butter.
Peel several sweet potatoes.
You will want to cut them into about 1 inch pieces.
The recipe said to brush a baking dish with some of the melted butter but I went ahead and sprayed it with non stick spray.
To the butter add 1 teaspoon cinnamon
Add 1/2 teaspoon of salt
add 1/2 cup of honey.  Spray the measuring container first and it will come right out.
Add 2 teaspoon of lemon zest
Whisk this all together.  It will be a little thick.
Drizzle about half of the mixture on at this time.
I decided that some chopped pecans would be good on top.  Cover and place in a preheated 325 oven.  Bake for 30 minutes.  Take out and stir and drizzle the rest of the honey mixture.  Recover and bake another 30 minutes.
The finished product.  They were very good and the lemon added a nice different taste to the potatoes.

Honey Sweet Potato Recipe
5 Tablespoon melted butter
1 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoon lemon zest
1/2 c honey
chopped pecans optional
