Ham Au Gratin

Here in the middle of the holiday season you might find yourself with some leftover ham and wonder what to do with it.  This is the perfect recipe for that little bit of ham when you are tired of ham sandwiches.
Ham, potatoes, and cheese what can be wrong with that.
Start with 4 tablespoons of butter.  Place in a saucepan.
When the butter is melted add 5 tablespoon all purpose flour and whisk it together.
This is going to make the base for the cheese sauce.
While that is cooking get your potatoes, onions and ham sliced and ready to go.
Add 2 1/2 cups milk to the base in the pot.
Heat the milk mixture until smooth and thick.
In a casserole dish layer the slices of potato, onion and ham.  Repeat layers.
The sauce is getting thick.
Add 1 1/2 cup of the cheese to the milk mixture and stir until smooth and melted.
It begins to turn a little yellowy orange with the melted cheese.
Pour over the potatoes, onions, and ham that are in the dish.
Place in a preheated 350 oven for about 30-35 minutes.  Take out and top with the remaining 1/2 c of cheese and put back in the oven for about 5 minutes or until the cheese is melted.
The finished product.  We always serve green beans with this dish.  A nice quick dish that you can use up those leftovers with.  Can't beat that.

Ham Au Gratin Recipe
4 T butter
5 T all purpose flour
2 1/2 c milk
1/2 t salt
1.4 t pepper
2 c grated cheddar cheese
2 c chopped cooked ham
1 medium onion sliced
3 medium potatoes sliced
