Red Velvet 7 Layer Bars

These delicious bars were the special treat that helped us bring home another National Championship Monday night. You know I had to find something red velvet to make for the game.  I have been wanting to try these for a while now so no time like the present.  I think you will enjoy them too.
The thing about magic bars is they get better the longer they sit.  These turned out really good.
 I forgot the pecans again. That is what happens when they are in the freezer.
 Start with 1 softened stick of butter
 One egg
 3/4 cup sugar.  Beat well
 1/2 teaspoon vanilla
 1/2 teaspoon baking powder
 1/8 teaspoon salt
 1 Tablespoon cocoa powder
 1 Tablespoon red food coloring
 1 1/4 cup all purpose flour.  Mix well.
 Line a 9x13 baking dish with parchment paper.  I have never done this before, so I decided to try it this time.
 So spread the crust in the bottom of the pan.  It's not as easy as it might seem.  The dough is very sticky. Place in a preheated 350 oven.  Bake for 8 minutes.  It will not be cooked all the way just set.
 Now you are ready to put the good stuff on top.
 Start with 1 1/3 cup coconut
 Sprinkle on top
 1 cup semi sweet chocolate chips
 1/2 cup white chips
 Sprinkle both on top.
 1 cup coarsely chopped pecans
 The pour a can of sweetened condensed milk all over the top.
 I probably should have spread it out some more. Place back in the 350 oven and bake for 25 minutes.
 Straight from the oven.  Do not cut yet.  The longer it sits the easier it will cut.
 Using the parchment paper lining life the bars out of the pan to cut.
Cut and serve.

Red Velvet 7 Layer Bars Recipe
1 1/4 cup all purpose flour
1 Tablespoon cocoa powder
1/2 teaspoon baking powder
1/8 teaspoon salt
1 stick softened butter
3/4 cup sugar
1 egg
1/2 teaspoon vanilla
1 Tablespoons red food color
Preheat oven to 350.  Bake for 8 minutes.
Then add
1 1/3 cup coconut
1 cup semi sweet chocolate chips
1/2 cup white chips
1 can sweetened condensed milk
1 cup pecans

Back in 350 oven and bake 25 minutes.
