Cranberry Pecan Oatmeal Cookies

I made these cookies for a friends birthday.  They are so good.  The cranberries give it a nice sweet/tart flavor.  The recipe calls for dipping half in white chocolate and then sprinkling some extra pecans on top.  I decided not to that step and the cookies were delicious without the chocolate.  But if you want to dress them up some dip them in the chocolate.
These cookies are so good and very easy to make.
 I forgot to get the pecans out of the freezer for this picture.
 Start with 2 sticks softened butter
 3/4 cup brown sugar
 1/2 cup sugar
 1 egg
 Mix that all together and then add 2 teaspoon vanilla
 1 teaspoon baking soda
 1/2 teaspoon baking powder
 1/4 teaspoon cinnamon
 1 3/4 cups all purpose flour
 1 1/2 cups quick oats
 1 1/2 cups dried cranberries
 1/2 cup chopped pecans
 The dough is going to be thick.
 I used a scoop to dip up the cookies and then rolled them a little bit.  Place in a preheated 350 oven.  Bake for 8-9 minutes.  The recipe went into great detail to not over bake these cookies.  If they look done they are over baked.
 This is the first batch.
 The second batch.  This is right out of the oven.  Let them rest on the pan for a few minutes and they will finish baking.
Then this is after they have cooled some.  They finish baking on the sheet.

1 cup softened butter
3/4 cup brown sugar
1/2 cup sugar
1 egg
2 teaspoons vanilla
1 3/4 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1 1/2 cups quick oats
1 1/2 cups dried cranberries
1/2 cup chopped pecans
Preheat oven to 350.  Bake 8-9 minutes  Take out and let finish baking on sheet.
