Valentine's Day Cheesecake Pretzel Bites

I found this recipe on Pinterest lately and thought they looked like a tasty Valentine's Day treat to make.  I was not mistaken.  These are easy to put together and you can change the flavors if you like and they can be changed to match different holidays.  I don't know a Valentine that would not like these homemade treats.
These just take a few ingredients and many you may already have in your pantry.  The original recipe calls for cherry jello but if you like strawberry better use that.  Lime would be good for St Patrick's Day if you wanted to make them then too.
These are the ingredients that you will need for the second part of the recipe.
Start with 4 oz of cream cheese, softened.  I used lite.
Add 2 teaspoons of gelatin mix.  I used the sugar free so it was the entire package.  I think the non sugar free package is larger  but not sure.
Then add 3 cups of powdered sugar one cup at a time.  Mix between each cup.  If you don't do this you will end up with powdered sugar all over your kitchen.
This is the first cup.  It has the consistancy of the cream cheese mints if you have ever made those. Here is my recipe for them. party mints
After 2 cups of powdered sugar.
With all 3 cups added.  I put it in the fridge for a few minutes so that it would firm up some.
While it was chilling I put the pretzels out on a wax paper lined cookie sheet.
Then roll a little bit of the mixture into a ball.
Then place in the middle of the pretzel.
Then put another pretzel on top.  Make sure they are turned the same way. Press down a little to smoosh it.
When you get them all filled and topped place in the fridge for a few minutes to get firmed up again.
Then put the white chocolate pieces in a microwave bowl.  Heat in 30 second intervals stirring between each until the chocolate is melted.
Then take the stuffed pretzels and dip half in the white chocolate.
The sprinkle some Valentine's day sprinkles on the chocolate before it hardens.
Place on some wax paper until harden.  Then store in an air tight container in the fridge.  Valentine's love getting some homemade treats.  These are easy enough to get the kids involved too.

Valentine's Day Cheesecake Pretzel Bites Recipe

4 oz cream cheese softened
2 teaspoons cherry gelatin mix
3 cups powdered sugar
mini pretzel twists
8 oz vanilla Candiquik melted
sprinkles

If you have white chocolate leftover dip some of the pretzels in the chocolate.  Can't let that chocolate go to waste.
