Family Mexican Night

If you are looking for something fun to do as a family give Family Mexican Night a try.  Add a good movie after dinner and you will have a nice evening that they will be talking about for a long time.
All you need to do is a little prep work before dinner. Fix your ground beef like you would for tacos with whatever seasoning mix you like.  Add chopped onions to the meat.  Heat a can of refried beans and a can of enchilada sauce.
Start by cooking some corn tortillas in a little oil.  You will want them nice and brown on both sides.  This time I won't be folding them in half for taco shells.  I left them flat so we could make tostadas and Mexican pizzas like Taco Bells. When the tortilla is done, drain on paper towels.
Go ahead an fry up what you will need for the first round.  They are better if they are fresh so you might need to fry a couple more, but it won't take long.
We started with the Mexican pizza.  This is my husband's pizza.  I forgot to take pictures of him making it.  He started on the bottom with a layer of beans and then topped with some meat.  If you want sauce or cheese then the second tortilla.  On the top layer add sauce, cheese and tomatoes.  Place in the oven or toaster oven if you are only do a few.  Melt the cheese.  Then enjoy.

Here's mine.  I did the same steps except I did not add beans or tomatoes.  Mine was just as good.

Next we made tostadas.  He started with a layer of beans.  We used one of my cake decorating off set knives to make it easier to spread.
They spread pretty easily.
Then top with meat.
Add some of the enchilada sauce.
Add cheese, tomatoes, and taco sauce.  If you want to add sour cream or black olives go for it.  The fun with these is that you can add whatever you like to them.

You can also use some flour tortillas to make burritos with all the fixings inside.  Have fun with it.  My husband talked about it for days about how fun it was to make all of these things.  Don't be afraid about frying the tortillas they are very easy to fry.
