Pimento Cheese

Homemade pimento cheese is another classic southern recipe.  As a kid I didn't know you could actually buy it in the stores because my mother always made it from scratch.  You don't go to many teas or parties in the south without someone bringing a plate of pimento cheese sandwiches.  And if you are lucky they have cut the crust off.
The beauty of this recipe is that it doesn't make a huge amount.  It makes enough for a couple of sandwiches which was perfect for us.
Drain a 2 oz jar of diced pimentos.
Finely grate 1 cup cheddar cheese.
A nice heaping cup.
Add the pimentos to the cheese.
Add 2 Tablespoons mayo.
I added a teaspoon of sour cream to the mix.  I like using sour cream and mayo together, it just makes it seem a little creamier.
Mix well.
I added a dusting of cayenne pepper for a little zip.
Mix well.
Nothing better than a pimento cheese sandwich on fresh white bread.

Pimento Cheese Recipe

1 cup cheddar cheese finely grated
2 oz diced pimentos drained
2 Tablespoons mayo
