One Layer Super Moist Carrot Cake

You know how you love carrot cake but it makes this huge three layer monstrosity that last forever.  I have found the perfect solution with this recipe.  This makes a one layer carrot cake with a circle of cream cheese frosting on top.  All the flavors and taste of the carrot cake without the huge cake.  Now if I can only find a recipe like this for strawberry cake.  If you have one please send it to me.  Let me know how you like this recipe.


 Is that not a beautiful just right size cake?
 I know it is a lot of ingredients but it is worth it.  This recipe calls it a super moist cake and it is.  You don't normally see Greek yogurt in a carrot cake.
 Start with 1 cup brown sugar
 3/4 cup oil
 1/4 cup Greek yogurt
 3 eggs
 1/2 teaspoon salt
 1/4 teaspoon nutmeg
 2 teaspoon cinnamon
 1 teaspoon baking soda
 2 teaspoons vanilla.  Mix all this well.
 2 cups all purpose flour added one cup at a time.  Mix well after each.
 2 cups grated carrots.  Depending on the size of your carrots this could be 3-5 carrots
 3/4 cup chopped pecans
 Mix well.
Instead of using a regular cake pan you need to use a spring-form pan.  The cake will rise higher than a regular 9 inch cake pan.  The spring-form pan needs to be a 9-10 inch. You will want to grease and flour it well as you would a regular cake pan.  You can use Pam but I am always a little cautious of using Pam if I want to release a cake from the pan.
 Pour the batter into the pan.  Place in a preheated 350 oven and bake for 32-38 minutes.  Test for doneness after the time.
 Remove from oven and let sit for about 5 minutes before removing the sides.
 Remove it from the spring-form pan and let cool completely before putting the cream cheese frosting on top.
 This is what is needed for the great frosting.  Yes this one uses heavy whipping cream.  It gives it a light fluffy taste.
 Start with 8 oz cream cheese at room temp and a softened stick of butter. Mix those well.
 Add 2-2 1/2 cups confectioner's sugar a little at a time.
 1/8 teaspoon salt
 2 teaspoons vanilla.  I used my vanilla bean vanilla.  It does turn the icing a little dark but having those specks of vanilla bean in there is worth it.
 2 Tablespoons heavy cream
Mix well.  I didn't like the consistency of the icing so I added more confectioners' sugar to it so it wouldn't slide off the cake.  Use your judgement on that. 
 Place the icing around the top of the cake.
 Then add some chopped pecans for garnish.
This is a just right piece of carrot cake.


Carrot Cake Recipe

1 cup brown sugar
3/4 cup oil
1/4 cup Greek yogurt
3 eggs
2 teaspoons vanilla
2 cups all purpose flour
1 teaspoon baking soda
2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
2 cups grated carrots
3/4 cups pecans

Bake 350 for 32-38 minutes

Cream cheese frosting
8 oz softened cream cheese
1/2 cup softened butter
2-2 1/2 cups powdered sugar
2 Tablespoons heavy cream
2 teaspoon vanilla
1/8 teaspoon salt
pecans for garnish.
