Pioneer Woman Steak Sandwich

I found this recipe about two years ago and it has become a family favorite.  It was originally from the Pioneer Woman but I have made some modifications to it.
What you will need for this delicious sandwich are the following: cubed steak, green bell pepper, onion, butter, Archies or some kind of steak sauce, bread and cheese.
Melt a little butter in a skillet.
While the butter is melting slice a medium onion or two.  (I like onions)
Add the onions to the melted butter and add a couple of tablespoonfuls of steak sauce.
While the onions are "sweated" a little cut the pepper in strips.  You don't have to have peppers if you don't like them.  If I don't have them on hand the onions alone are fine.
Add them to the skillet as well to cook down a little.
Now it is time to cut the cubed steak.  You will want to cut this in strips against the grain.  If you cut it along the grain it will fall apart.  It would probably still taste good but it will be very messy.
You don't have to have small strips and they don't even have to be the same size.
Take up the peppers and onions and put them in a bowl for a few minutes while we brown the meat.

Put some more butter and steak sauce in the skillet to melt.
Layer the meat around the pan so that it can be browned.  When brown on one side turn to brown the other side.
Make sure there's no more red.
Add the peppers and onions to the meat and let cook together for a few minutes.
Slice your bread in half.
Butter both pieces of bread.
You will want your bread toasted.  I use my griddle pan on the stove top.  You could put it in the oven to toast.  Toasting the bread makes it really tasty.
Nice and golden brown.  Ready for the meat.
You will want to layer the meat and veggies on the bread.  Can you tell which one is mine with all the peppers and onions?
Now top with cheese.  I used mozzarella cheese this time.  I have also used provolone cheese as well.  Really whatever is your family favorite is great.  I put it in the oven for just a couple of minutes to melt the cheese.
The cheese is all nice and gooey.
Top with the other piece of bread and cut in half.  You will not be disappointed in this sandwich.

Steak Sandwich Recipe

1 large onion
1 large green bell pepper
2 to 3 lbs cubed steak
1/2 c steak sauce I use Archies
2-4 deli rolls

Slice onion and peppers and cook in 1/4 stick of butter until soft and light brown.  Remove from heat and set aside.  Slice cubed steak against the grain.  Season with seasoning salt.  Heat 2 tablespoons butter over medium heat in the same skillet until melted.  Add meat in a single layer.  cook one side until brown, then flip and cook until brown, about a minute on both sides.  Add 1/2 c steak sauce and 2 tablespoons butter.  Add cooked veggies.  Stir to combine.  Butter halves of bread and brown.

To assemble, lay bottom half of roll on plate.  Place meat mixture to bread.  Add cheese is desired and pop in oven for a couple of minutes to melt.  Top with the other half of roll, cut in half and devour.
