Hearty Sausage and Hash Browns

I found this recipe a couple of years ago and I love it.  It is a hearty and filling meal to serve your family.  You can pair it with some kind of bean, a green salad or simply by itself.  I don't think you will be disappointed.
Four simple ingredients make up this hearty meal.  Smoked sausage (I used lite), hash brown potatoes with peppers and onions, a little butter and a little shredded cheese.
The first thing you need to do is melt a small pat of butter in a non stick skillet over medium heat.
While that is melting, you need to slice the sausage.  If you notice in the picture you can cut them two ways.  You can cut them in thin ovals or split the sausage in half and cut the sausage in chunks.  I like it in chunks better and I have made this recipe both ways.  I like the crusty browning on the all the edges.
Finish cutting the sausage.
Add to the butter in the skillet.  Stir until well browned on all sides.
Remove from the skillet and place in a bowl.  You will return the sausage to the skillet in a few minutes.
Melt a little more butter in the skillet over medium heat.
Then add the hash browns.  If your family doesn't like peppers and onions then I feel sorry for you because peppers and onions go great with almost everything.  You can use regular hash browns instead or you could cut your own peppers and onions.  These are so pretty with the red and green peppers.
Stir the potatoes until they are lightly browned.
Stir the sausage back into the potatoes.  Reheat thoroughly.
Sprinkle shredded cheese on top.  As much or as little as you like.  You can use any kind of cheese that you prefer. I usually have Colby Monterey Jack cheese.  It melts really well.
Lightly toss to melt all the cheese and to spread the goodness to all of the potatoes.
Just sprinkle a little pepper on top and enjoy.

Hearty Sausage and Hash Browns Recipe

1 bag frozen cubed hash brown potatoes with peppers and onions
1/4 c butter, divided
1 package smoked sausage, cut into pieces
1/4-1/2 c shredded cheese

In a large skillet melt a pat of butter in a skillet over medium heat. Cut the sausages into pieces then, cook the sausage until golden brown.  Remove from heat and place in a bowl for later. Melt another pat of butter over medium heat.  Add the hash browns to the skillet and cook until golden brown.  Add the sausage back to the potato mixture.  Heat through.  Sprinkle the top of mixture with shredded cheese.  Heat until melted.
