I have had and or made this cherry pie for as long as I can remember. You can make this pie with any kind of pie filling you like and with whatever kind of nuts you like. I have made it with apple pie filling and walnuts. So whatever kind of fruit your family enjoys will make a great pie.
This pie is very easy to make and only uses a couple of ingredients.
I use a Jiffy cake mix because it is just the right size for this pie. If you use a regular sized white or yellow cake mix use only half of it. You can save the rest in a ziplock bag for another pie or for birthday cake popcorn. If you are making this pie to take somewhere you could use two cans of pie filling and the whole cake mix and a 9x13 pan.
The first thing you will do is spray a round pie plate with nonstick spray. Then you will dump the can of pie filling in the bottom and spread around the bottom of the pan.
The next step is to dump the cake mix on top of the pie filling.
Spread the cake mix out evenly on top of the filling. You can use your hands to do this breaking up any lumps in the cake mix.
Cut up pats of butter to put on top of the cake mix. I never measure how much I use usually between 1/4-1/2 a cup. I cut the pats pretty thin and just place them all across the top. I know some people melt the butter and pour it across the top. Whichever way you like will work.
Then sprinkle rough chopped pecan pieces across the top. Place in a preheated 350 degree oven.
I check the pie after about 45 minutes. It usually needs to stay in the oven for close to an hour. The last 15 minutes check it regularly to keep it from getting too brown. Serve warm and it is wonderful with a little vanilla ice cream.
