This recipe was in this months Taste of Home magazine under "Diner Meals". I love open faced roast beef sandwiches so I thought I would give it a try.
All you need is a pound of deli roast beef, white bread, ready made mashed potatoes and jar/can of beef gravy. I chose the Heinz gravy with mushrooms but you can use any kind. They make a gravy with onions that is good too. For the potatoes, you could make them from scratch but then it would take longer than 15 minutes. There are a lot of really good ready made ones on the market. There are refrigerated ones and frozen ones. They taste good too. When you come home after a long day of work and you have practices to get the kids to or games to attend you can make a home cooked meal if you take advantages of these short cuts.
Take you deli meat and tear it into smaller pieces and put in a medium sized pot. I make sure and trim the little bit of fat off too.
Pour your gravy on top of the meat.
Stir to mix well. You can add a little pepper now too. Turn on medium to medium low because you don't want it to burn. While your meat is heating put those potatoes in the microwave.
While the meat and potatoes are heating up put the bread in the toaster or toaster oven to get lightly browned.
Put the toast and potatoes on your plate. Then add the meat and gravy to both.
It couldn't get any easier than this. Dinner is on the table in 15 minutes or less. You won't be late to the practice or game. As good as Denny's.
