This is a nice quick one pot meal. I’m sure if you don’t like peas you could substitute another vegetable. If you like mushrooms I could see those being added as well. Make it your own.
You could probably change out the cheese too if you would like.
These are small penne pasta noodles. You could use the regular size ones if you like or whatever shape of pasta you have on hand.Star by cutting two chicken breast into small pieces. I will admit this is my least favorite thing to do. I don’t enjoy touching chicken.
Put a little olive oil in the bottom of your pot and heat it up before adding your chicken pieces in. Cook your chicken, stirring to get all sides cooked.
Add a little minced garlic to the chicken when is is almost cooked.
Add one can of cream of chicken soup. I use cream of mushroom a lot too so either would work.
Add 3 cups low sodium chicken broth.
Stir it up well until it is all mixed.
Add three cups uncooked penne pasta. There was just a little extra pasta in the box so I added it too. A little extra won’t hurt.
Stir it well to separate the pasta pieces. Bring to a boil uncovered. After it boils reduce heat to simmer and cook for 15 minutes. Stir it occasionally. It will start to stick a little. You will also think here is too much liquid but it will cook down.
After the 15 minutes, turn it down and add two cups of green peas. Stir them in. Let them get hot.
Add 1/2 cup freshly grated Parmesan cheese. You could use the green can stuff but it might taste a little different.
Then added a little dried basil to the pot. I wish I had some fresh basil.
Dish up and add a little more Parmesan cheese on top.

2 Tablespoons olive oil
2 boneless skinless chicken breast cut into pieces
Minced garlic
1 can cream of chicken soup
3 cups low sodium chicken broth
3 cups uncooked penne pasta
2 cups frozen peas
1/2 cup freshly grated Parmesan cheese
Fresh basil leaves for garnish
