One Pan Baked Rice and Vegetables

 I tried a new side dish tonight. It was easy to make and colorful too. It was very tasty. I paired it with some homemade chicken fingers and we had a really good meal tonight.


Just look at all those colorful vegetables.


 

Now for how it all begins.
This dish is made in sections if you will. The first part is the seasoning. So in a small bowl mix together these seasonings. 1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon black pepper


1 teaspoon garlic powder


1 teaspoon salt


Now stir it up. Set aside for now.

Now to chop up the vegetables. 1 bell pepper cut into 1 inch pieces. I chose a red pepper.

Cut 1 red onion in half and cut into wedges.

Cut a zucchini into chunks.
1/2 a head of broccoli chopped into florets.

1/2 head of cauliflower chopped into florets. The recipe also called for carrots to be chopped and added to the rice but the store was out of carrots. 
Measure out 1/4 cup olive oil.


I used a butter flavored olive oil for this.


Drizzle the olive oil over the veggies.



Then stir and stir some more to make sure all the veggies are coated.

You are going to take out 1 1/2 teaspoons of the seasoning to go in the rice. Sprinkle the rest over the veggies. Stir them well again to make sure they are all seasoned.

Measure out 1 1/4 cups water

1 1/2 cups chicken broth


3 cloves of garlic minced.


1 1/2 cups jasmine rice uncooked


This recipe calls for jasmine rice. I have never used this kind of rice before. I was pleasantly surprised how it turned out.


Add 1 1/2 teaspoons of the seasoning mix.


2 Tablespoons butter. I melted it a little bit. Mix everything together.


Pour into a 9x13 baking dish.


Cover tightly and place in a preheated 400 oven. Bake for 20 minutes.

Turn the heat up in your oven to 425. Uncover the pan. Now add the veggies on top.

It is a full pan. Place in the oven and bake for 30 minutes.
Don’t they look good. So bright and colorful.
And dinner is done. I think you will enjoy this dish. I’m already thinking of ways to change it up a little. I wonder if Brussels sprouts would be good in this.

1 1/2 cups jasmine rice uncooked
1 1/2 cups chicken broth
1 1/4 cup water
3 cloves garlic minced
2 medium carrots thinly sliced 
2 Tablespoons butter

1 red onion halved and cut into wedges
1 bell pepper cut into 1 inch pieces
1/2 head cauliflower chopped into florets
1/2 head broccoli chopped into florets
2 zucchini cut into chunks
1/4 cup olive oil

1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper

Preheat oven to 400. Bake the rice covered for 20 minutes. Up the temp to 425. Bake the veggies for 30 minutes.
