Pistachio St Patrick's Day Bread

I found this recipe last year and had plans on making it but ran out of time before St Patrick's day and then didn't think I wanted green bread at other times during the year.  So this week I decided I would try it.  It is so easy to make and if you keep pudding in your pantry for those nights you want something a little sweet you could already have everything you need.  Give it a try.
You can use a white or yellow cake mix.  Those are walnuts.  I guess if you don't like walnuts you could use another nut.  Pecans would probably do well.
Empty the cake mix in a bowl.
Add the box of pistachio instant pudding mix
Add 4 eggs.  I like how they are turning the pudding green.
2 Tablespoons of water
1/4 cup of oil.
1 cup sour cream.  I use light and it worked fine.
1 teaspoon almond extract
Now mix well.  See it isn't very green yet.
Add some green food coloring, then mix to see if it is the color you want.  If it isn't dark enough add some more.
I thought this was a pretty color.
Add 3/4 cup chopped walnuts or whatever nut you chose to use. Mix well.
Then divide into two loaf pans that have been sprayed well.  You could also make them in the mini loaf pans to give away for St Patrick's day treats.  If you use small pans adjust the baking time.  Place in a preheated 350 oven.  Bake for 40-45 minutes.
Remove from the oven and let cool in pan for about 10 minutes.
Remove from pan and let cool on wax paper or parchment paper until cooled.  Then wrap in plastic wrap.

Pistachio St Patrick's Day Bread Recipe

1 white or yellow cake mix
4 eggs
1/4 cup oil
2 Tablespoons water
1 3oz box instant pistachio pudding mix
1 cup sour cream
green food coloring
1 teaspoon almond extract
3/4 cup chopped walnuts.

Preheat oven to 350, bake for 40-45 minutes.
