Butterscotch Banana Bread

I had some bananas that needed to be used before they spoiled and this recipe caught my eye.  You don't normally think of bananas and butterscotch together but they make a nice combination. This bread reminds me of the banana sticky buns that I posted here some time ago.  We learned to make them in home ec in high school.  This was much easier than the sticky buns.  You could add some pecans to the bread if you like.  I might have to do that next time.
Depending on the size of your bananas you will need three or four.
Start out by mashing the bananas.  You will need about 1 1/2 cups of the mashed banana.
This is the mashed up banana.
Add an egg.
Add 6 Tablespoons softened butter.
3/4 cup brown sugar
1 teaspoon vanilla
Mix that up well.
Add 1 1/4 cup plain flour.
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking powder.  Mix well.
Add 1 cup butterscotch chips
Fold the chips into the dough.
Pour into a sprayed loaf pan.  Place in a preheated 325 oven.  Bake for 65-70 minutes.
Let it sit in the pan for about 10 minutes.
This is what happens when you set the clock instead of the timer on the oven.  It got too cool and it stuck on bottom.  It doesn't look too pretty but it taste good.
Sometimes the recipes that mess up and don't look so pretty taste the best.

Butterscotch Banana Bread Recipe

3-4 ripe bananas (about 1 1/2 cups mashed)
6 Tablespoons butter softened
3/4 cup brown sugar
1 egg
1 teaspoon vanilla
1 1/4 cup flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butterscotch chips

Preheat oven to 325.  Bake 65-60 minutes.  Let sit in pan for 10 minutes.
